3 steaks, 7 – 8 ounce per steak, 0.75 – 1 inch thick
The steak is essentially a slice from an Eye of the Round Roast. It will generally have a layer of fat on two of the sides, but very little if any marbling throughout the meat. Its leanness makes it popular with many dieters. There will also be no gristle or sinew, which makes it popular with children, teenagers and picky-eaters. Dry aged for 28 days for optimal tenderness and flavour.
